Preparing the vegetables for this soup involves a lot of peeling and chopping, so it is best to get everything ready first. Begin by peeling and chopping four large carrots into small pieces. Next, peel and dice one small pumpkin into small cubes. Chop one onion, 2 cloves garlic and 1 celery rib finely.

In a large pot over medium heat, add 2 tbsp of extra virgin olive oil. When hot, add in the chopped onion, garlic and celery. Cook until tender and translucent, making sure to stir occasionally to prevent any burning.

After sautéing the aromatics, add in the chopped pumpkin and carrots. Cook for around five minutes or till slightly softened. Mix in 1 tsp ginger, minced or grated, with the pumpkin-carrot mix.

Step 4: Add Lentils and Broth

Add a cup of rinsed red lentils along with 3 cups of vegetable broth to the pot of vegetables. Bring it up to a rolling boil before turning down to a simmer for another twenty minutes.

There is something truly magical about having a homemade soup on hand. It can be the perfect meal to warm you up during a cold day, or provide a comforting source of sustenance when you’re feeling under the weather. Luckily for you, this rustic carrot, pumpkin, and lentil soup recipe is not only easy to make but also can be prepped ahead of time!

If you’re looking to make this soup ahead of time, it’s best to not add any cream right away. When fully cooked, allow the soup to cool completely before transferring it into an airtight container or several smaller containers. I find that mason jars are perfect for this! The soup will keep in the refrigerator for up to 4 days.

When you’re ready to reheat the cream-free soup, do so on stovetop on medium heat until heated through. You’ll want to stir occasionally as it reheats. Once the soup has been heated and is ready to serve, feel free to stir in some heavy cream or a non-dairy alternative for added richness.

If you’re using an immersion blender or transferring the mixture into a standard blender and want to freeze it, be sure to let it cool completely. Once cooled, transfer the mixture into an airtight container or freezer bag, leaving about 1 ½ inch space from the top. Because of the high water content in the vegetables, be sure that your containers are freezer safe with a tight-sealing lid. The soup can be stored in the freezer for up to three months.

To reheat the frozen soup: thaw it overnight then reheat it on medium heat on your stovetop while stirring occasionally. When heated through serve with fresh croutons and some greens fresh herbs like thyme, arugula or parsley.

Overall, this rustic carrot, pumpkin and lentil soup recipe is both delicious and practical for those times when life gets busy – just make it ahead of time and store it in your fridge. Not only does prepping the soup beforehand bring more convenience into your daily routine but It also allows all of those incredible flavors and those healthy ingredients ample time to mesh together for maximum deliciousness!

When you prepare this savory rustic carrot, pumpkin & lentil soup recipe, there are a few tips and tricks to keep in mind for perfect results.

Firstly, take the time to properly chop your vegetables. Uniformly chopped ingredients will cook consistently and ensure that each bite has the perfect balance of flavors.

When it comes to cooking the vegetables, resist the urge to rush the process. Cooking on medium-low heat will allow the ingredients to soften and develop their flavors without burning or becoming mushy.

In addition, don’t overcook the lentils. Keep them slightly firm until they turn tender; this will add texture to your soup without compromising the creamy consistency.

To enhance the flavor of your soup, toast the spices first before adding them to the pot. This releases their natural oils and intensifies their aroma for a more fragrant dish.

For an extra touch of creaminess without dairy, blend a portion of the soup in a blender and add back into the pot at the end.

Finally, always taste as you go along. Adjust seasoning levels with salt and pepper as well as add additional spices if needed. Remember that cooking is an art, and these simple tips can assist you in becoming a true master chef in your kitchen!
